Without these impurities, the molecules in supercooled water are not able to form the regular, crystalline structure required to transition into ice, despite the low temperature. Instead, supercooled water exists in a metastable state, where the liquid is in a delicate balance — it can spontaneously freeze if disturbed or if an impurity is introduced.
